Peanut Butter + Coconut Protein Balls

It can be difficult sometimes to find a good "grab-and-go" snack that will keep us feeling full for more than a few minutes. The solution? Peanut Butter + Coconut Protein Balls. This recipe is the perfect mix of carbohydrates, protein and fat. Check out the recipe below!

Time: 15 minutes | Servings: about 10 (2 protein balls/serving)

Ingredients:

  • 3/4 cup old fashioned oats

  • 2/3 cup peanut butter (creamy OR crunchy)

  • 1/2 cup chia/flaxseed mix

  • 1/4 cup shredded coconut

  • 2 TBSP honey

  • Optional: 2 TBSP dark chocolate chips, chopped

Directions:

Place all ingredients into a bowl and mix until well combined. Roll into 2 inch balls and store in the fridge for easy snacking. Enjoy!
